A sensation-based human being.

Paolo was born in Tuscany, one of the richest regions in the world for its culinary heritage. His mother passed on an incredible palate and his artisan hands. His father, a love for growing and sourcing the best products.

He has lived in different countries, realizing each time how rich his heritage is, and how well he can combine techniques, cultures and ingredients. Paolo is a certified Longevity Chef.

Kelly

The operator behind it.

Kelly met Paolo back in 2018, in Spain. Together, they went on a mission to find their reason to be. Kelly is creative and passionate about tech, longevity, well-being and nature. Trilingual in English, French and Italian.

They co-founded Chef Paolo Salvati, a successful italian catering business in Lyon, catering beautiful events for thousands of people. Now, they are opening Salva, the vision closer to their heart.

Where Salva is.

Paolo is in residence on the Côte d'Azur through September 2026, with an ultra-high-net-worth household and their guests.

Beyond this residency, we accept a limited number of engagements each year. Next windows open from autumn 2026, for households, retreats, and private events.
