The problem with most working lunches is that they do not work. Sandwiches on a conference table, a buffet that requires too many decisions, portions calibrated for volume rather than function — by two in the afternoon, the room is somewhere else. The thinking that was supposed to happen in the afternoon does not happen, or happens badly.

Cognitive Sprint is a 60-minute culinary intervention designed for exactly this moment. A private lunch, standing or seated depending on the agenda, built around the specific cognitive demands of what comes before and after. Chef Paolo Salvati selects and prepares each element with one question in mind: what does this group need to sustain performance for the next three to four hours?

The answer is never the same twice. A morning of intense negotiation calls for something different than a day of creative work. A group under pressure needs different fuel than a group in a reflective session. This is the discipline that Paolo developed cooking in rural Tuscany for people who worked long physical and intellectual days — food as a functional response to a specific human condition, not food as a gesture.

Cognitive Sprint includes full on-site preparation, service and clearing. No catering company. No delegation. One chef, complete presence, total focus on the outcome.
